Eggnog crack pie bars for thanksgiving

You are a day or two away for Thanksgiving and you haven't thought of a dessert yet -_-. Thought you had it all down, no? That's absolutely fine. Look into the fridge - you have eggnog. Well, it's Thanksgiving there needs to be some eggnog - Let's get to it!!

 

Ingredients 

For the crumble 

Oatmeal cookie - 8 pcs

Brown sugar - 1 tablespoon 

Salt  - 1/4th teaspoon

Unsalted melted butter - 1/4th cup 

For the filling 

Egg yolks - 8 

Milk - 1 cup

Eggnog - 3/4th cup 

Vanilla - 1/2 teaspoon 

Cornstarch - 1/4th cup

Brown sugar - 1/4th cup 

Granulated sugar - 1.5 cups 

Process -

1)Preheat oven to 350°F

2) Using a food processor, crumble up the oatmeal cookies. Add brown sugar as well as melted butter and reblend it till combined.

3) In a 9x13" spread out the crumble to a flat layer and set aside.

4) In a mixing bowl add sugar, brown sugar, cornstarch as well as butter, cream together.

5) Pour in the milk as well as the eggnog, mix. Add the vanilla extract, salt, and egg yolks and mix (at this point the mix might look broken and that you've made a mistake somewhere for it to look like that, you are doing it all right. I had the same feeling. Hence, you never see the prebaking pictures for this recipe ;) )

6) Pour mix on the oatmeal crumble and pop in the oven. Bake for a good 20 minutes at 350°F. Turn it down to 315°F and continue to bake for another 10 minutes or till the sides are set and the center has a bit of a jiggle to it. 

7) Cool completely. For best results let it sit in the refrigerator overnight. 

8) Cut and serve. Sprinkle with some icing sugar for presentation.
